WOW! these beautiful, delicious healthy, low carb bliss balls will wow everyone. So super simple to make, one step in the blender and you're done! Keto, banting, LCHF friendly, sugar free, gluten free, grain free, nut free!
Servings: 30
Ingredients
- 150 g desiccated coconut
- 20 g extra desiccated coconut for rolling
- 5 g erythritol/xylitol or sweetener of choice
- 150 g cream cheese
- 70 g frozen blueberries should work with fresh however I have not tried it
- ½ tsp vanilla extract
- zest of 1 small lemon or ½ lg grated off using a fine grater
Instructions
- Place all ingredients into the mixer and blend 1 min/speed 5/mc on
- Scrape down and blend 30secs/speed 5/mc on
- Roll into truffle sized balls and roll in coconut
- If you are strictly counting carbs, divide mixture into 4 equal portions and make sure you get 7 or 8 per portion so you have 30 balls.
Conventional instructions
- Place all ingredients into a food processor and blend until smooth
- Roll into truffle sized balls and roll in coconut

Help! I used fresh coconut and the mixture is too wet. How can I dry it out please?
Sorry just saw this! adding in desiccated coconut would have worked, hopefully it wasn’t wasted!
For how long can I keep the Keto blueberry bliss balls for? Do they need to be stored in the fridge? Are they suitable for home freezing?
They keep 4/5 days in fridge or are fine to freeze 🙂

Easy bliss ball with a lovely flavour. I have made these to have as treats while I have gestational diabetes and need to restrict carbs and sugar.

How can we add protein to these?
yes you could add a scoop of pure WPI isolate to the recipe
