Keto butter chicken

Ingredients

 Butter chicken

1 onion (approx. 100g)

10g cloves garlic, peeled (2 cloves)

10g ginger (4cm)

1 medium heat chilli (adjust depending on heat you like)

2 tsp sweet paprika

2 tsp ground coriander

2 tsp ground cumin

1 tsp turmeric powder

1tsp cinnamon powder

3 Tbs ghee or butter

350g tomato puree

250g cream

2 tsp salt

40g almond meal

1 tsp garam masala

700-900g boneless chicken thigh diced 4cm

almond flakes and fresh coriander to serve (optional)

Cauliflower rice

Approx. 150g per person fresh cauliflower, broken into chunks

This is it! The one you've heard all about! Thermo Foodie and the chefs famour butter chicken, complete with thermomix and non-thermomix instructions, eating healthy low carb food cannot be easier. Keto, banting, diabetic friendly, this dish is sure to win over everyone in the family!

Ingredients

  • Butter chicken
  • 1 onion approx. 100g
  • 10 g cloves garlic peeled (2 cloves)
  • 10 g ginger 4cm
  • 1 medium heat chilli adjust depending on heat you like
  • 2 tsp sweet paprika
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp turmeric powder
  • 1 tsp cinnamon powder
  • 3 Tbs ghee or butter
  • 350 g tomato puree
  • 250 g cream
  • 2 tsp salt
  • 40 g almond meal
  • 1 tsp garam masala
  • 700-900 g boneless chicken thigh diced 4cm
  • almond flakes and fresh coriander to serve optional
  • Cauliflower rice
  • Approx. 150g per person fresh cauliflower broken into chunks

Instructions

  • 1 Chop cauliflower 10 seconds / speed 5 / mc on, set aside in large steaming bowl
  • If using whole almonds, mill here for 20 seconds / speed 10 / mc on, set aside
  • 2 Place onion, garlic, ginger and chilli into the mixer, chop 3 seconds / speed 5 / mc on, scrape down
  • 3 Add butter or ghee, salt, and all spices except garam masala
  • 4 Cook 3 minutes / varoma temp (115C) / speed 1 / mc off
  • 5 Add tomatoes, cream and almond meal, blend 30 seconds / speed 6 / mc on
  • 6 Add chicken and cook 16 minutes / 100 degrees / reverse / speed 1 / mc on
  • 7 Remove mc and add garam masala to curry, then sit varoma on top with cauliflower rice inside the main bowl, cook varoma temp / 6 minutes / reverse / speed 1
  • 8 Serve curry on top of cauliflower rice
  • 9 Garnish with toasted almond flakes and fresh coriander if desired.

Non-thermo instructions

  • 1 Grate cauliflower or chop in a food processor until it resembles the size of cooked rice, set aside
  • 2 Finely chop onion, garlic, ginger and chilli
  • 3 Into a large pot add butter or ghee and once hot add onion, garlic, ginger, chilli, salt, and all spices except garam masala
  • 4 Gently saute until it starts sticking to the bottom of the pot
  • 5 Add tomatoes, cream and almond meal, stir until combined
  • 6 Add chicken, stir and bring to a simmer. Turn to the lowest heat and place on a lid, gently cook 30 minutes
  • 7 Place caulilflower rice into a large bowl and cover, microwave on high 5 minutes, ***be very careful of the steam when removing from microwave and lifting lid!
  • 8 Add garam masala to curry, serve curry on top of cauliflower rice
  • 9 Garnish with toasted almond flakes and fresh coriander if desired.
