Keto Cauli Hummus

Ingredients

  • 2 Tbs (20g) almonds or almond meal
  • 260g raw cauliflower
  • 40g tahini
  • 1/2 tsp salt
  • 60g lemon juice
  • 40g extra virgin olive oil
  • 1/4 tsp turmeric
  • 1/2 clove garlic (2.5g)

 

  • Garnish (optional)
  • Extra virgin olive oil
  • Fresh green chillies
  • Olives
  • Paprika
  • Parsley
  • Pepper

Ingredients

  • 2 Tbs 20g almonds or almond meal
  • 260 g raw cauliflower
  • 40 g tahini
  • 1/2 tsp salt
  • 60 g lemon juice
  • 40 g extra virgin olive oil
  • 1/4 tsp turmeric
  • 1/2 clove garlic 2.5g

Optional Garnish suggestions

  • 2 tsp Extra virgin olive oil
  • 10 g Fresh green chillies, finely sliced
  • 5 Olives
  • 1/4 tsp Paprika
  • 1 tbs Parsley, roughly chopped
  • 1/4 tsp Pepper

Instructions

  • If using whole almonds, start by milling almonds
  • 10 seconds / speed 8 / mc on
  • Add all remaining ingredients and mix 20 seconds / speed 5 / mc on
  • Scrape down and mix 20 seconds / speed 4 / mc on
  • Repeat a third time if you like it smoother, garnish as desired
  • Store refrigerated up to 1 week or frozen 3 months

Traditional Method

  • For this recipe use purchased almond meal, or pulse almonds in a food processor until fine
  • Add all ingredients to a food processor and blend until well combined Or serve with The Low Carb Co seed crackers
