Ingredients
Chocolate layer
- 100 g natvia dark chocolate (baking aisle of woolworths)
- 30 g coconut oil (refined)
Coconut layer
- 30 g coconut oil (refined)
- 50 g cherries frozen or fresh, seeds removed
- 30 g erythritol/xylitol or sweetener of choice
- 120 g desiccated coconut
Instructions
- Break chocolate into small pieces and place into the mixer along with the first 30g coconut oil. Melt 4 minutes / 50C / speed 1 / mc off, remove and set aside in a warm place
- Without washing the mixer, add coconut oil, cherries and sweetener, chop 10 seconds / speed 5 / mc on, scrape down
- Heat 1 minute / 50C / speed 2 / mc on
- Add coconut, blend 20 seconds / speed 2 / mc on
- Line a small loaf tin with baking paper and tip the coconut mixture onto the paper. Press with a spatula until compacted and flat on top
- Pour the melted chocolate mixture over the pressed coconut and spread out evenly. Transfer the cherry ripe slice to the fridge for minimum 30 minutes before portioning or serving
- Store refrigerated up to 1 week or frozen up to 6 months
- Natvia dark chocolate can be found in the baking aisle of most supermarkets. If unavailable, the topping from our bounty slice in our first book Getting Started is a great substitute
