With only 3g carbs per serve this super quick and easy chocolate mug cake will satisfy those winter dessert cravings! Serve with a generous lashing of full fat cream, turn on your favourite tv show, and enjoy!

Ingredients

  • 1 egg
  • 45 g light olive oil, coconut oil or melted salted butter
  • 40-60 g granulated sweetener of choice
  • 2 tsp cocoa or cacao
  • 40 g almond meal
  • 1 Pinch salt if using oil
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract/essence

To serve

  • 40 g pouring/thickened or double cream

Instructions

Thermomix method

  • If following the thermomix method, consider doubling or tripling the recipe to make it worth the dishes. You can keep the mixture in a container in the fridge up to 7 days or freezer up to 3 months, and scoop our and cook a (thawed) serve as needed.
  • Combine ingredients in mixer, blend 30 seconds / speed 3 / mc on
  • Divide mixture into two mugs or bowls.
  • Microwave one serve 45 seconds or both for approx. 1 min 20. If you like your mug cake a little raw with a gooey centre, and your ingredients are fresh, simply heat only 30 seconds per serve.

Conventional method (recommended)

  • Combine ingredients in a small bowl and mix well with a spoon
  • Divide into two mugs or bowls.
  • Microwave one serve 45 seconds or both for approx. 1 min 20. If you like your mug cake a little raw with a gooey centre, and your ingredients are fresh, simply heat only 30 seconds per serve.
  • Serve with a dash of pouring cream, thickened cream or a scoop of double cream
