Keto Eggnog

600g cream, coconut cream or almond milk (unsweetened)

4 eggs (approx 225g)

40g xylitol or sweetener of choice

1 tsp ground cinnamon

1/2 tsp ground cloves

1 tsp vanilla extract

whipped cream for garnish

ground nutmeg for garnish

Tipsy Egg Nog Option;

80ml rum or brandy (note - this gives the eggnog an approximate alcohol content of 4.5%)

Ingredients

  • 600 g cream (or coconut cream or almond milk (unsweetened))
  • 4 eggs approx 225g
  • 40 g erythritol/xylitol or sweetener of choice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 tsp vanilla extract
  • whipped cream for garnish
  • ground nutmeg for garnish
  • Tipsy Egg Nog Option;
  • 80 ml rum or brandy note - this gives the eggnog an approximate alcohol content of 4.5%

Instructions

  • Add cream, eggs, xylitol, cinnamon, clove and vanilla into the mixer, cook 11 minutes / 70degrees / speed 3 / mc on
  • Blend 10 seconds / speed 7 / mc on
  • Pour into a container and chill
  • If making a Tipsy Egg Nog, add rum once cooled, mix thoroughly
  • Serve garnished with whipped cream and a sprinkling of nutmeg

Non-thermo method

  • Place the cream into a saucepan and bring to the boil, immediately switch off.
  • Whisk the eggs, xylitol and cacao until aerated
  • Pour the hot cream on, whisking gently as you pour.
  • Return the mixture to the pot, cook over very low heat, stirring, for about 3 minutes until it is slightly thickened and coats the back of a wooden spoon
  • Strain
  • Pour into a container and chill
  • If making a Tipsy Egg Nog, add rum once cooled, mix thoroughly
  • Serve garnished with whipped cream and a sprinkling of nutmeg

Notes

To whip cream, insert butterfly and whip on speed 3-4 until it holds soft peaks. Time will varies based on ambient temperature and cream type.
Store in the fridge 5 days or freeze up to a month. Once frozen can be whipped 1 minute / speed 9 / mc on for delicious egg nog icecream
To double this recipe, cook for 14 minutes and blend with care
