Ingredients
- 75 g zucchini ribbons
- 20 g cucumber
- 15 g celery
- 30 g avocado (approx 1/4)
- 2 spears asparagus
- 1/2 tsp salted butter
- 55 g sashimi grade salmon (or tuna, chicken, ham, bacon, etc)
- 5 g fresh coriander leaves (or mint or parsley)
- 1/2 boiled egg
- 1/4 lime
- 1 pinch salt
- 1 pinch pepper

- a few pieces fresh chilli (optional)
Instructions
- Prepare zucchini ribbons or 'zoodles' with a vegetable peeler
- Roughy chop or slice cucumber, celery, avocado and protein of choice

- Prepare the boiled egg if you haven't already, you can steam in the internal basket using 500g water, 14 minutes / varoma temp / speed 2 / mc on. Cool in cold water and peel
- Trim the hard ends from the asparagus and discard, cut the asparagus into short spears and pan fry for just one minute in a hot pan with a 1/2 tsp butter
- Assemble the bowl with the lettuce at the bottom, and all the ingredients layed out on top, finish with the mayonnaise dressing
