Nut free, sugar free, gluten free, grain free, dairy free, these cookies tick every. single. box!
Servings: 20
Ingredients
- 80 g sunflower seeds
- 40 g xylitol
- 4 tsp 12g cacao
- Pinch salt
- 50 g unsalted butter cold cubed or solid coconut oil
- 30 g 70% dark chocolate broken into pieces
- 200 g pepitas
- 2 egg yolks
Instructions
- Preheat oven to 170C
- Place sunflower seeds, xylitol, cacao and salt into the mixer, chop 10 seconds / speed 9 / mc on
- Add butter, mix 10 seconds / speed 6 / mc on
- Add chocolate, pepitas and egg yolks, mix 10 seconds / speed 5 / mc on
- Scrape down and repeat two more times
- Shape into 20 cookies (roll into a ball and flatten to cookie shape)
- Bake 15 minutes

Non thermomix method
- Place all dry ingredients into a blender, blend until fine and crumbly
- Add butter and yolks, blend until evenly combined
- Shape into 20 cookies (roll into a ball and flatten to cookie shape)
- Bake 15 minutes
