Keto Low Carb Churros

Ingredients

For the churros

1 tbs (20g) butter

1 tbs xylitol/erythritol or sweetener of choice

1 tsp cinnamon

For the batter

2 eggs

50g almonds

1 tsp xylitol (optional) or sweetener of choice

1tsp vanilla essence

1 tsp baking powder

120g cream cheese (break into chunks)

Low carb churros, sprinkled with cinnamon and served with a dark chocolate sauce for dipping.. Makes approx 10 churros depending on the size of your churro maker.

Instructions

  • Melt 20g of butter & set aside – to brush the churros maker AND brush the churros with.
  • Mix together 1 tablespoon of xylitol/preferred granulated sweetener with 1 teaspoon of ground cinnamon to coat the churros with.

To make the batter:

  • Mill almonds 20 seconds / speed 10 / mc on
  • Add remaining ingredients and mix 30 seconds / speed 4 / mc on
  • Allow mixture to rest 20 minutes to thicken
  • Heat churros maker and pour (or use a piping bag) the almond mixture in. Cook until golden brown (around 3 minutes in the Kmart machine). Remove the churros and set aside, keeping warm. Repeat with remaining mixture.
  • Using a pastry brush, brush the warm churros lightly with the remaining butter. Place the churros in a flat container and working quickly, dust them with the sweet cinnamon. Roll them around to pick up any sweetener in the container.
  • Serve warm with dark chocolate fudge sauce, recipe from Low Carb For Everyone cookbook.

Traditional method conversion

  • Use almond meal instead of whole almonds
  • Place all ingredients into a blender/food processor or bowl using a hand mixer, and blend until smooth
  • Allow mixture to rest 20 minutes to thicken
