Ingredients

Dressing

  • 150 g light olive oil (not virgin)
  • 5 g parsley (approx 1/6 cup)
  • 1/2 clove garlic (or one small clove approx 2g)
  • 2 egg yolks
  • 1 tsp white wine vinegar
  • 1/2 tsp salt
  • 20 g lemon juice
  • 2 tsp tomato paste (10g)
  • 50 g cornichons (sour pickled cucumbers)
  • 10 g capers (in vinegar, drained)
  • 10 drop tabasco (optional)

Salad

  • 300 g baby salad leaves/ frisee lettuce
  • 1 tsp dill, fresh (or 1/2 tsp dried)
  • 235 g smoked salmon
  • 150 g lebanese cucumber (approx 1 whole)
  • 12 cherry tomatoes
  • 50 g danish feta
  • 20 g chives (approx 1/4 bunch)
  • 15 g shallot or red onion
  • 20 g capers (in vinegar, drained, approx 4 tsp)
  • 1/4 cup micro herbs, alfalfa sprouts or snow pea sprouts
  • 150 g avocado (optional, i didnt include as i was making ahead)

Instructions

For the dressing

  • Measure out the oil, make sure you are NOT using an extra virgin, virgin or cold pressed oil or the dressing will taste bitter
  • Place parsley and garlic into the mixer and chop 3 seconds / speed 7 / mc on
  • Without scraping down, place yolks, vinegar and salt in the mixer
  • Start the mixer to speed 4 and slowly pour the oil onto the lid, allowing it to drip in and emulsify with the yolks
  • Stop the machine once all oil is incorporated
  • Add lemon juice, tomato paste, cornichons, capers and tabasco if using, mix 10 seconds / speed 4 / mc on
  • Set aside in the fridge for serving later

For the salad

  • On a large, round platter, place the lettuce leaves in a wreath shape
  • If using fresh dill, roughly chop it, then sprinkle the fresh or dried dill onto the smoked salmon
  • Cut the smoked salmon into thin long strips and wrap then around to look like small flowers, position around the wreath on top of the lettuce
  • Peel the cucumber in strips using a vegetable peeler and curl up the strips again to mimic a flower shape, position around the wreath on top of the lettuce
  • Position the cherry tomatoes on top of the lettuce, spaced out evenly
  • Break the danish feta into pieces by hand and space around the wreath on top of the lettuce
  • Finely chop the chives and very finely slice the shallot, spread around the wreath on top of other ingredients
  • Sprinkle capers and micro greens on top to finish off the sald, if using avocado, only add right before serving, you can dice or slice the avocado
  • Serve with the dressing in the middle

Notes

  • Swap out the smoked salmon for prawns, chicken or roasted pumpkin for delicious variations to suit all taste buds
  • Omit feta for a dairy free version

Conventional method for the dressing

  • Measure out oil into a separate jug or cup, set aside
  • Add all remaining ingredients to a tall jug and using a hand mixer start mixing
  • Start pouring the oil in slowly until all incorporated
  • Add remaining ingredients except cornichons, and blend until well combined
  • Finely chop cornichons and stir through sauce
