Keto Lamington chia pots

Ingredients

100g shredded or desiccated coconut plus garnish

400g water

(or 270g ayam coconut milk plus 130g water)

50g chia seeds

5g vanilla extract

10g xylitol (or sweetener of choice, or none)

30g raspberries (fresh or frozen)

20g 85% chocolate

Wow so delicious! Thermo foodie and the chef just keep coming out with these delicious and easy recipes, made in minutes this LCHF recipe is a great treat even if you are following strict keto, only 3.4g carbs per serve, gluten free, dairy free, grain free, nut free, it even makes a great lunchbox filler!

Ingredients

  • 100 g shredded or desiccated coconut plus garnish
  • 400 g water
  • or 270g ayam coconut milk plus 130g water
  • 50 g chia seeds
  • 5 g vanilla extract
  • 10 g erythritol/xylitol or sweetener of choice or sweetener of choice, or none
  • 30 g raspberries fresh or frozen
  • 20 g 85% chocolate

Instructions

  • Place 100g coconut and the water into the mixer, blend 2 minutes / speed 9 / mc on
  • Strain all through a nut milk bag or strong tea towel, squeezing out every last drop. (You can save the pulp and google recipes but we personally cant stand the texture so it goes to the compost)
  • Rinse out the mixer and then return the milk, we got 380g, plus the xylitol, chia seeds and vanilla
  • Mix 1 minute / speed 3 / mc on
  • Leave it to rest at least 30 minutes (room temperature, in the mixer is fine)
  • Remove half of the pudding to chosen pots
  • Add raspberries to the mixer and blend with remaining mixture 1 minute / speed 2 / mc on
  • Portion out raspberry mixture into your pots, top with a few more raspberries if you can allow it, plus a sprinkling of chopped or grated chocolate and some shredded coconut
  • Store refrigerated up to 5 days

Traditional method conversions

  • Place 100g coconut and the water into a high power blender, blend 2 minutes, alternatively puchase a can of ayam coconut cream and add 130g water, then skip to step 3
  • Strain all through a nut milk bag or strong tea towel, squeezing out every last drop. (You can save the pulp and google recipes but we personally cant stand the texture so it goes to the compost)
  • Rinse out the blender and then return the milk, we got 380g, plus the xylitol, chia seeds and vanilla
  • Blend on slow, or mix by hand slowly for 2 minutes
  • Leave it to rest at least 30 minutes (room temperature, in the mixer is fine)
  • Remove half of the pudding to chosen pots
  • Add raspberries to the mixer and blend or stir into remaining mixture slowly
  • Portion out raspberry mixture into your pots, top with a few more raspberries if you can allow it, plus a sprinkling of chopped or grated chocolate and some shredded coconut
  • Store refrigerated up to 5 days
