Servings: 10
Ingredients
- 250 g light olive oil must not be extra virgin
- ½ tsp. salt
- 1 tsp. Dijon mustard
- 1 tsp. apple cider vinegar
- 2 pinches white pepper
- 30 g fresh lemon juice
- 2 egg yolks or 1 whole egg
Instructions
- Measure out olive oil into a separate jug or cup, set aside
- Add all remaining ingredients except oil, then set the machine to 2 minutes / speed 4 / mc on and pour oil slowly through the hole in the lid of the mixer until all gone
Store refrigerated in a sterilized jar for 1 week
Conventional instructions
- Mix egg, vinegar, salt, pepper and mustard with a stick blender (or mixer) and add the oil slowly in a thin stream. The mayonnaise should begin to thicken. Continue to mix until all the oil has been added and the mayonnaise has set
- Add lemon juice. Mix some more until combined

I’m trying to work out how I measure 250 grams of olive oil. Why not spoonfuls or cup measure.
Hi Liz, thanks for your message, you put a cup on top of the thermomix and turn on the scales then weigh the oil into the cup. 250g oil is the same as 264ml. We dont use cups because an Australian cup is different to a US cup and we dont know where our followers are dialling in from 🙂 Where in the world do you live? We live in Perth, Western Australia
