Mini Keto Poppy Pizzas

  • 80 g Almond Meal
  • 170 g Mozzarella
  • 50 g Cream Cheese
  • 1 Egg
  • 2 pinches Salt


  • 50 g Cherry Tomatoes sliced into rounds
  • 5 g Chives (thin) cut down to approx. 4cm lengths
  • 1 tsp Poppy Seeds
  • 1 tsp Extra Virgin Olive Oil
  • 2 pinches Salt


  • Preheat oven to 180C and put a baking tray in the oven to preheat
  • If using whole almonds, mill 10 seconds / speed 8 / mc on, remove and set aside, if using almond meal or flour go straight to step 3
  • Without washing the bowl, chop mozzarella and cream cheese 10 seconds / speed 6 / mc on, scrape down
  • Add egg and salt, mix 10 seconds / speed 4 / mc on scrape down
  • Add almond meal, mix 10 seconds / speed 3 / mc on
  • Divide the dough into 10 small portions and roll each portion into a ball. Press the portions between two sheets of baking paper we like to use a chopping board to press down to create around thin disc approx. 10cm diameter.
  • Remove the top layer of baking paper and chill the discs for 10 minutes
  • Decorate the discs with chives as the stems, sliced cherry tomatoes as the petals of the poppies and poppy seeds in the centre of the tomatoes Sprinkle with salt and drizzle with olive oil before moving to a hot tray and baking for 10 minutes or until golden
