Keto Chorizo prawns & zoodles

I used to make this recipe with spaghetti but absolutely loving this LCHF variation with added prawns & zoodles
Ingredients
- Cherry tomatoes left whole
- Chorizo – sliced
- Red Capsicum – sliced
- Yellow Capsicum- sliced
- 1 red onion – sliced
- Extra virgin oilve oil
- Salt and Pepper
- 4 cloves garlic – smashed
- Chilli flakes optional
- Prawns peeled and de veined – (optional, omit if you don’t like seafood) – cook in oven for 5 minutes
- Zoodles
- Basil leaves
- Zest of 1 lemon
- Juice of 1 lemon
- Another generous splash of extra virgin olive oil
- Salt + Pepper to taste
- Option to serve with parmesan shavings
Instructions
- Preheat oven to 190 degrees and prepare a large baking dish and add:-Cherry tomatoes left whole
-Chorizo – sliced
-Red Capsicum – sliced
-Yellow Capsicum- sliced
-1 red onion – sliced
-Extra virgin olive oil
-Salt and Pepper
-4 cloves garlic – smashed
-Chilli flakes (optional) - Bake in oven for 25 mins stirring once half way through
- Meanwhile – prepare zoodles with 1 large zucchini
- After 25 minutes add to baking dish:
- Prawns (peeled and de veined) – (optional, omit if you don’t like seafood) – cook in oven for 5 minutes
- Then stir through:-Zoodles-Basil leaves-Zest of 1 lemon-Juice of 1 lemon-Another generous splash of extra virgin olive oil-Salt + Pepper to taste
- Option to serve with parmesan shavings
