Keto Chorizo prawns & zoodles

I used to make this recipe with spaghetti but absolutely loving this LCHF variation with added prawns & zoodles
Course: Savoury

Ingredients

  • Cherry tomatoes left whole
  • Chorizo – sliced
  • Red Capsicum – sliced
  • Yellow Capsicum- sliced
  • 1 red onion – sliced
  • Extra virgin oilve oil
  • Salt and Pepper
  • 4 cloves garlic – smashed
  • Chilli flakes optional
  • Prawns peeled and de veined – (optional, omit if you don’t like seafood) – cook in oven for 5 minutes
  • Zoodles
  • Basil leaves
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Another generous splash of extra virgin olive oil
  • Salt + Pepper to taste
  • Option to serve with parmesan shavings

Instructions

  • Preheat oven to 190 degrees and prepare a large baking dish and add:
    -Cherry tomatoes left whole
    -Chorizo – sliced
    -Red Capsicum – sliced
    -Yellow Capsicum- sliced
    -1 red onion – sliced
    -Extra virgin olive oil
    -Salt and Pepper
    -4 cloves garlic – smashed
    -Chilli flakes (optional)
  • Bake in oven for 25 mins stirring once half way through
  • Meanwhile – prepare zoodles with 1 large zucchini
  • After 25 minutes add to baking dish:
  • Prawns (peeled and de veined) – (optional, omit if you don’t like seafood) – cook in oven for 5 minutes
  • Then stir through:
    -Zoodles
    -Basil leaves
    -Zest of 1 lemon
    -Juice of 1 lemon
    -Another generous splash of extra virgin olive oil
    -Salt + Pepper to taste
  • Option to serve with parmesan shavings
