Keto Savoury Mince

SERVES 4

Ingredients

3 cloves garlic (approx 12g)
Same amount in fresh ginger (approx 12-15g)
500 cauli (including green leaves of the cauliflower if you like, i did 300 white and 200 leaves)
1tbs sesame oil
500g mince
1/2 (70g) red onion, roughly sliced
2 tsp salt
2 loose tbs fenugreek leaves or 1 tsp mild curry powder
2 tsp paprika
Asparagus bunch (approx 5-7 spears) hard end discarded, roughly chopped
Any other veg you need to use up
Sour cream and chipotle powder to serve

Family 'mince' just like mum use to make, only low carb! Keto, LCHF banting friendly, using your mixer and a pan, this dinner can be ready for a family in 10 minutes flat!

Ingredients

  • 3 cloves garlic approx 12g
  • Same amount in fresh ginger approx 12-15g
  • 500 cauli including green leaves of the cauliflower if you like, i did 300 white and 200 leaves
  • 1 tbs sesame oil
  • 500 g mince pork, beef or chicken
  • 70 g red onion , roughly sliced
  • 2 tsp salt
  • 2 loose tbs fenugreek leaves or 1 tsp mild curry powder
  • 2 tsp paprika
  • 5-7 spears asparagus roughly chopped
  • Any other veg you need to use up (eg. capsicum, mushrooms, chilli, zucchini, broccoli)
  • Sour cream and chipotle powder to serve

Instructions

  • Method
  • In the mixer, chop the garlic and ginger 3 seconds / speed 7 / mc on
  • Set aside
  • Chop the cauliflower 15 seconds / Speed 4 / mc on
  • In a large frypan or wok, heat the oil on high, add ginger and garlic
  • Cook 2 minutes, stirring often
  • Add onion, mince and salt to the pan, cook until almost well done
  • Add cauliflower, fenugreek leaves (or curry powder), 2 tsp paprika, asparagus and any other veg you like
  • Cook high heat until softened (approx 5 minutes)
  • Serve with sour cream and chipotle powder (optional)

Non-thermo method

  • Finely chop or grate the garlic and ginger
  • Chop or grate the cauliflower to rice size
  • In a large frypan or wok, heat the oil on high, add ginger and garlic
  • Cook 2 minutes, stirring often
  • Add onion, mince and salt to the pan, cook until almost well done
  • Add cauliflower, fenugreek leaves (or curry powder), 2 tsp paprika, asparagus and any other veg you like
  • Cook high heat until softened (approx 5 minutes)
  • Serve with and chipotle powder or chilli flakes if you like it spicy

This was delicious. Altered the veggies slightly as I didn’t have asparagus (but did have broccoli, mushroom and zucchini). Ended up tasting really great and was so filling! Sour cream was perfect with it too!
