Keto Tandoori Prawn Skewers

SERVES 20 canapes or 4 main course with a side

Ingredients

For the marinade

1 fresh long red chilli (medium heat)
2-3 cloves garlic (10g)
1cm fresh ginger (10-15g)
1 tsp ground cumin
1 tsp ground coriander
½ tsp paprika
¼ tsp turmeric
1 ¼ tsp salt
1/8 tsp ground cloves
1/8 tsp ground nutmeg/mace
1/8 tsp cinnamon powder
30g olive oil/coconut oil

For the prawns
500g prawns
20-40 short skewers (this depends on the size of the prawns
a few sprigs of fresh coriander (or rocket to serve)

For the dressing
1 lime
greek natural yoghurt
pinch salt

  • 1 tsp ground coriander
  • ½ tsp paprika

  • 1 ¼ tsp salt
  • 1/8 tsp ground cloves
  • 1/8 tsp ground nutmeg/mace
  • 1/8 tsp cinnamon powder
  • 30 g olive oil/coconut oil

For the prawns

  • 500 g prawns
  • 20-40 short skewers (this depends on the size of the prawns
  • a few sprigs of fresh coriander or rocket to serve

For the dressing

  • 1 lime
  • greek natural yoghurt
  • pinch salt

Instructions

  • For the marinade, place chilli, garlic and ginger into the mixer, chop 5 seconds / speed 9 / mc on
  • Scrape down, add all spices, salt and oil, stir 10 seconds / speed 2 / mc on, set aside
  • Check prawns are deveined and thread onto the skewers
  • Coat the prawns in the marinade and set aside in the fridge for as long as you can, 1 hour is good, 5 hours is great!
  • Pan fry or bbq until done
  • Combine dressing ingredients and serve along side the skewers

Non thermo mixer instructions

  • Finely chop chilli, garlic and ginger
  • Add all spices, salt and oil, stir to combine and set aside
  • Check prawns are deveined and thread onto the skewers
  • Coat the prawns in the marinade and set aside in the fridge for as long as you can, 1 hour is good, 5 hours is great!
  • Pan fry or bbq until done
  • Combine dressing ingredients and serve along side the skewers
